Ingredients
- (3lbs) Picanha
- Coarse Salt (to taste)
Directions
- Preheat the oven to 375°F (190°C).
- Prepare the picanha by scoring the fat cap lightly in a crosshatch pattern, being careful not to cut into the meat.
- Season generously with coarse salt, rubbing it into all sides of the meat.
- Place the picanha fat side up on a wire rack inside a roasting pan to allow even heat circulation.
- Bake in the preheated oven for about 45 minutes to 1 hour, or until the internal temperature reaches 130°F (54°C) for medium-rare.
- Rest the meat for 10 minutes before slicing against the grain.
