Whole Baked Picanha
Want to make amazingly soft & tender Picanha? You only need some coarse salt to get started!

Ingredients

  • (3lbs) Picanha
  • Coarse Salt (to taste)

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the picanha by scoring the fat cap lightly in a crosshatch pattern, being careful not to cut into the meat.
  3. Season generously with coarse salt, rubbing it into all sides of the meat.
  4. Place the picanha fat side up on a wire rack inside a roasting pan to allow even heat circulation.
  5. Bake in the preheated oven for about 45 minutes to 1 hour, or until the internal temperature reaches 130°F (54°C) for medium-rare.
  6. Rest the meat for 10 minutes before slicing against the grain.
