A simple 10-minute steakhouse method that works beautifully for both ribeye and filet – perfect for a cozy Valentine’s dinner or an elevated weeknight meal.

Directions
Ingredients
• 8-oz ribeye or filet (either Angus or Wagyu would work) (room temp)
• Salt & black pepper
• 1 tbsp high-heat oil (tallow, ghee, or avocado oil)
• 1 tbsp butter
• 1 smashed garlic clove (optional)
• Thyme or rosemary (optional)
Instructions
1. Heat pan (cast iron) on high until very hot.
2. Season steak generously; pat dry.
3. Sear in oil, 2 min per side (don’t move).
4. Butter baste with butter, garlic, herbs for 1–2 min.
5. Rest 5 min. Finish with flaky salt.
Doneness
• Medium-rare: pull at 125°F, rests to 130–135°F
